Title:   Soft Pretzels

3 T yeast
4 c warm water
1 t sugar substitute
2 T sea salt
8-10 c bread flour
Directions:   Dissolve yeast and sugar in warm water and let stand 10 minutes. Add remaining ingredients to form a soft dough. Knead well. Place in greased bowl and let rise until double. Divide into 48 pieces. Shape each into a rope 18 inches long and twist into pretzel shape. Boil together 4 c water and 4 t baking soda. Drop one pretzel into boiling liquid until it floats, about 1 minute, remove, drain and place on baking sheet. Sprinkle with coarse salt. Repeat with remaining pretzels. Bake at 450F for 12 minutes until golden brown and shiny.
Makes:   48 large pretzels
