Title:   Wheat Pita Breads

1 T yeast
1 1/2 c warm water
1/4 c honey
1 T sea salt
2 T olive oil
1 1/2 c bread flour
1 1/2 c whole wheat flour
Directions:   Dissolve yeast in water. Add honey, salt and oil. Let stand 10 minutes. Combine flours in large mixing bowl. Gradually add liquid to flour mixture, working with hands to form a moist, flexible dough. Knead well, adding additional flour if necessary to form a soft dough. Let dough rest for 5 minutes, then divide into 18 pieces. Place dark metal baking sheet or pizza stone in oven for 10 minutes to preheat at 450F. Flatten each dough ball with rolling pin to baout 1/4-inch thickness. Place on a baking sheet, two at a time, and bake at 450F until puffed and golden brown. Cool. Fill as desired.
