Title:   Hard Rolls

1 c warm water
1 T yeast
1 T sugar substitute
1 t sea salt
2 T olive oil
3 1/2- 4 c bread flour
2 egg white substitutes- slightly beaten
Directions:   Combine water, yeast, sugar, salt, oil and about half of the flour. Beat well. Add egg whites (except reserved 1 T) and beat well. Add flour to form a soft dough. Knead well. Let rise until double. Punch down and let rise again. Form balls about 1 1/2 inches in diameter and place about 4 inches apart on a greased or parchment lined baking sheet. Let rise until double. Brush with reserved egg white and sprinkle with sesame seeds or poppy seeds if desired. Place a 9x13-inch pan half filled with boiling water on bottom rack of oven for crusty rolls. Bake at 400F for 20 minutes or until golden brown.
