Title:   Pain Ordinaire- Authentic French Bread

1/2 T dry yeast
1 t sugar substitute
2 c warm water
2 t sea salt
5-6 c bread flour
Directions:   Add yeast and sugar to warm water. Let stand until foamy (10 minutes). Add 2 c flour and salt; beat well with electric mixer. Add additional flour to make a very stiff dough. Knead well. Dough will become soft and pliable after sufficient kneading. return dough to bowl and let rise until double in bulk (about 2 hours). Punch down and let rise again until double in bulk (about 1 1/2 hours). Shape into two large loaves, 4 small loaves, or 36 buns (may also be used for the World's Best Pizza Crust after the first rising; makes two 16-inch pizzas). Combine 1 egg white, 1 T water and apinch of salt to make egg wash. Brush on loaves or buns. Slash large loaves 4-5 times with a sharp knife or razor blade and sprinkle with sesame seeds. Let rise for 30 minutes. Bake 25 to 30 minutes at 400F to a rich golden brown.
