Title:   Foolproof Wheat Bread

1 T yeast dissolved in
1/4 c warm water
2 1/2 c hottest tap water
3 c whole wheat flour
2 T vital wheat gluten
3 T vegetable oil
3 T honey
3 T molasses
1 T sea salt
2-3 c additional wheat flour
Directions:   Dissolve yeast in water. Combine hot water, 3 c flour, and gluten in large mixing bowl. Add oil, honey, molasses, and salt. Beat well with electric mixer. Stir in dissolved yeast and additional flour to make a soft dough. Divide into two portions and shape each into a loaf. Place in greased loaf tins, lightly grease top of each loaf, and let rise until not quite double. Bake at 350F for 45 minutes until golden brown. Remove bread from pans immediately. Brush crust with shortening or butter and cover with a towel to cool.
Makes:   2 large loaves
