Title:   Coconut Rice

1 1/2 c white rice
1/2 t turmeric
1/2 t sea salt
1 t vegetable oil
1 1/2 c water
3/4 c coconut milk
Directions:   Rinse and drain the rice. In a saucepan on medium-high heat, saute the rice, turmeric, and salt in the oil for a minute or two, stirring constantly. Add the water and coconut milk, bring to a boil, cover, and reduce the heat to low. Simmer until the rice is tender and the liquid absorbed, 15 to 20 minutes.
Makes:   4 to 6 servings
