Title:   GF Crustless Pumpkin Streusel Pie ****

2 T packed brown sugar
2 T organic coconut or palm sugar - or more brown sugar
1/4 c certified GF oats - pulsed in a food processor - or quinoa flakes
1 t ground cinnamon
1 T Earth Balance butter
1 can pumpkin puree
1 can (12 oz.) full-fat organic coconut milk
3 T unsweetened applesauce mixed with 1 1/2 t additional baking powder, 2 T warm water and 1 1/2 t Ener G Egg Replacer
1/2 c sugar - or 2/3 c organic palm or coconut sugar
1/2 c GF flour
1 t ground cinnamon
1 1/2 t pumpkin pie spice
1 1/4 t baking powder
1/8 t sea salt
Directions:   Heat oven to 350F. Grease pie plate well, getting into the ridges. In small bowl, mix first 5 ingredients until crumbly; set aside.

Place remaining ingredients in a blender or food processor in order listed. Cover and blend until smooth. Pour into pie plate. Bake for 20 minutes until pie just begins to set up a little. Then sprinkle evenly with Streusel Topping and return to oven for 30 to 35 minutes more. Once knife inserted in center comes out clean, cool about 20 minutes. Refrigerate about 3 to 4 hours or until chilled.
