Title:   8-Grain Strawberry Pancakes

1/4 c spelt flour
1/4 c buckwheat flour
1/4 c whole wheat flour
1/4 c oat flour
1/4 c millet flour
1/4 c rye flour
1/4 c barley flour
1/4 c corn meal
1/4 c ground flax seed or chia seed
2 t baking powder
1/2 t sea salt
2 c non-dairy milk
3 T olive oil
2 T agave nectar or maple syrup
1 t vanilla extract
1 1/2 c frozen or fresh strawberries- chopped
1 t coconut oil
Maple syrup or fruit sauce, for serving
Directions:   Combine the flours [or your own combination of flours], ground seeds, baking powder, and salt in a mixing bowl. Add the milk, olive oil, sweetener, and vanilla and mix thoroughly. Fold in the strawberries. Grease a skillet with the coconut oil and heat over medium-low heat for 3 to 5 minutes, or until a drop of water sizzles when it hits the pan. Pour 1/2 to 3/4 c of the batter onto the skillet for each pancake. Cook until the bottom is golden brown and bubbles appear on top of the pancake, then flip to cook the other side. Repeat with the remaining batter. Serve topped with maple syrup or your favorite fruit sauce.
Makes:   10 to 12 6-inch pancakes
