Title:   Mango Pudding

1/4 c raw almonds
2 ripe mangoes- peeled and cut into pieces
1 banana
3 dates- pitted
1/8 c unsweetened, shredded coconut
1/2 t vanilla
1/4 c currants
1/8 t cinnamon
Directions:   Grind almonds in a high-powered blender and then add mangoes, banana, dates, coconut, and vanilla and blend until smooth and creamy.

Place in a bowl, stir in currants, and sprinkle with cinnamon. Chill for at least 2 hours before serving.
Makes:   3 servings
