Title:   Apple Berrynut Bites

2 c unsulfured dried apples
1 1/2 c unsweetened vanilla soy, hemp, or almond milk
2 c sliced fresh, organic strawberries (or frozen, thawed)- divided
1/4 c oatmeal
1/2 c raw pecans
1/2 c raw Brazil nuts
3 T ground chia seeds
1 c organic baby spinach
1/4 c unsweetened, shredded coconut- plus extra for garnish
1/2 T cinnamon
1/4 t nutmeg
3/4 c dates- pitted
Directions:   Soak dried apples in soy milk for at least 1 hour or overnight.

Preheat the oven to 300F. In a high-powered blender, blend soaked apples, soy milk and half the strawberries with remaining ingredients until smooth. Add a little more soy milk if needed. Spoon into small muffin cups or small, oven-proof custard cups and bake for 20 minutes. Place 1 to 2 strawberry slices on top of each and sprinkle with additional coconut. Chill in the refrigerator before serving.
