Title:   Cuban Black Beans

1 c chopped onion
3/4 c chopped green bell pepper
2 c no-salt-added or low-sodium tomato juice
4 1/2 c cooked black beans or 3 cans (15 oz.) no-salt-added or low-sodium black beans- drained
1 1/2 c chopped tomatoes- fresh or packaged in BPA-free cartons
1 c no-salt-added or low-sodium tomato sauce
4 cloves garlic- minced
1 t cumin
1/2 t garlic powder
1/4 t black pepper
1 T red wine vinegar
1/4 c fresh cilantro
Directions:   Heat 1 T water in a large pan and water-saute onions and peppers until tender. Add all remaining ingredients except vinegar and cilantro. Bring to a boil. Cover, reduce heat, and simmer 20 to 25 minutes or until vegetables are tender. Stir in vinegar and cilantro.
Makes:   6 servings
