Title:   Channa Saag (Spicy Chickpeas with Spinach)

1 medium onion- thinly sliced
2 garlic cloves- crushed
1 inch piece ginger- grated
2 medium tomatoes- chopped
1 t ground coriander
1 t garam marsala
1 t ground cardamom
1 t ground cinnamon
12 oz. spinach- chopped (fresh or frozen)
1 1/2 c cooked garbanzo beans or 1 can (15 oz.) no-salt-added or low-sodium garbanzo beans- drained
1/8 t cayenne pepper- or to taste
Directions:   Heat 2 to 3 T water in a large pan. Water-saute onion, garlic, and ginger until tender. Add the tomatoes, spices, and spinach and cook 5 minutes. Stir in the chickpeas and cayenne pepper and cook for another 5 minutes.
Makes:   2 servings
