Title:   Summer Corn and Tomato Saute

2 c fresh, raw corn kernels
1/4 c chopped red onion
1 lb. tomatoes- chopped
1/4 c chopped fresh basil
Freshly ground black pepper to taste
Directions:   Heat 2 T water in a skillet and saute corn and onion, stirring occasionally until corn is tender, about 5 minutes. Remove from heat and let stand for 5 minutes. Stir in tomatoes and basil and season with black pepper.
Makes:   4 servings
