Title:   Sweet Potato Sticks

Nonstick cooking spray or small amount of olive oil
1 1/2 lbs. sweet potatoes- washed and peeled
1 t olive oil
2 t apple cider vinegar or red wine, tarragon, or balsamic vinegar
1 T fresh thyme- stemmed and chopped
Black pepper to taste
Directions:   Preheat the oven to 325F. Spray 2 baking sheets with nonstick cooking spray or wipe with a small amount of olive oil. Place the sweet potatoes in a pot and cover with cold water. Over high heat, bring potatoes to a boil and let boil for 1 minute.

Drain potatoes and, while still hot, toss with olive oil, vinegar and thyme. Lay evenly onto the prepared baking sheets and bake in the oven for 20 minutes, until lightly browned and tender. Season with black pepper.
