4 to 6 unsulfured prunes- pitted
2 Granny Smith apples- cored and quartered
5 c water- divided
1 large onion- chopped
1 c carrots- chopped
2 c unsweetened soy, hemp or almond milk
1/4 c dried split peas
1/4 c hulled barley
1/2 head cabbage- coarsely chopped
1 t dried basil
1 t dried oregano
1/2 t dried thyme
Black pepper to taste
3 T lemon juice
1/2 c raw walnuts- toasted then finely chopped
1 t caraway seeds
|Directions:||Blend the prunes, apples and 2 c of the water in a high-powered blender until smooth and creamy.
Add to a large soup pot along with the remaining water, onion, carrots, nondairy milk, split peas, barley, cabbage, basil, oregano, thyme and black pepper. Bring to a boil, reduce heat, cover, and simmer for 1 hour.
Stir in lemon juice, chopped walnuts and caraway seeds.
