Title:   Taco Salad

From:   Nutritarian Cookbook
2 ears of corn- husked- or 1 c frozen corn- thawed
12 oz. romaine lettuce
1 red pepper- diced
1 green pepper- diced
1/2 c diced red onion
1/4 c cilantro or parsley
1 1/2 c cooked black beans or 1 can (15 oz.) low-sodium or no-salt-added black beans- drained
Directions:   If using fresh corn on the cob, steam for 7 minutes or until tender, drain, cool and cut kernels off the cob.

Combine salad ingredients and toss with Guacamole Dressing.

Pairs well with Spice Sweet Potato Cornbread.
Makes:   4 servings
