Title:   Brown Cremini Gravy

1 medium onion- thinly sliced
6 cloves garlic- minced
1 c sliced cremini or other mushrooms
3 T whole wheat flour
2 t arrowroot powder or cornstarch
2 T nutritional yeast
1 T Bragg Liquid Aminos
2 c water
1/2 T balsamic vinegar
1 T fresh thyme leaves
1/8 t dried sage
1/8 t black pepper
Directions:   Heat 1/8 c water in a medium saute pan, add onion, garlic and mushrooms. Saute until onions are soft and mushrooms have lost their water. Add the flour, arrowroot powder, nutritional yeast, and aminos. Gradually add the water, stirring constantly. While stirring, bring the gravy to a boil and allow it to thicken. Add vinegar, thyme, sage, and black pepper. Serve hot over baked spaghetti squash or thinly sliced strands of zucchini that have been lightly boiled.
