1/4 c pitted dates- packed
1 T virgin unrefined coconut oil- softened
2 T honey
1/2 c walnuts
1/4 c whole wheat flour
1/4 c oats
1/4 t sea salt
1 pckg. (12.3 oz.) Silken firm tofu- drained
1 c plain low-fat yogurt
3 T honey
Juice of 1 lemon
1 t pure vanilla extract
3 c fresh or frozen strawberries- divided
|Directions:||1. Preheat oven to 350F. In a food processor, add dates, coconut oil and honey, and blend until dates are finely chopped. Add walnuts, flour, oats and salt, and pulse a few times until walnuts are roughly chopped and ingredients are combined. Mixture will be chunky. Pour mixture onto a baking sheet, spread out evenly, and bake in oven until golden brown, stirring once or twice, about 15 minutes. Remove and set aside to cool.
2. In a food processor, blend tofu, yogurt, honey, lemon juice, vanilla and 1 1/2 c strawberries until smooth. Add remaining strawberries and pulse until roughly chopped. Pour strawberry mixture into a 9x9-inch pan and top with walnut mixture.
3. Cover tightly and freeze for at least four hours before serving. Cut into 16 squares and serve. Freeze leftover portions.
