Title:   Blueberry Breakfast Cake
Category:   Breakfast - Clean (Only natural/organic ingredients), Vegetarian
2 c whole wheat pastry flour
1 t cinnamon
1/2 t ground ginger
1 t baking powder
1/2 t baking soda
1/2 c unsweetened applesauce
1/4 c light brown sugar or other sweetener
1/4 c raw sugar or other sweetener
1 t vanilla extract
1 c milk (soy, rice or almond)
1 c wild blueberries- frozen
Directions:   Preheat oven to 350F. In a large bowl, whisk flours, cinnamon, ginger, baking soda and baking powder together. Add applesauce, sugars, extract and non-dairy milk and mix until just combined, adding a little extra non-dairy milk if necessary. Gently fold in blueberries, transferring to a greased or non-stick 9x9-inch pan. Sprinkle top with brown sugar and bake 30-35 minutes or until an inserted tooth pick comes out clean.
