Title:   Low Fat Vegan Nacho Cheese
Category:   Sauces & Gravies - Clean (Only natural/organic ingredients), Vegetarian
1/4 c raw cashews
2 T nutritional yeast
1/2 t onion powder
1/2 t sea salt
2/3 c milk (soy, rice, or almond)
2 t yellow miso paste
1/2 t lemon juice
2 t cornstarch
1/4 c roasted red bell pepper
1/2 t cumin
1/4 t black pepper
Dash cayenne pepper
Directions:   Combine all ingredients in a food processor and process until smooth and creamy. Transfer to a saucepan and cook over medium heat, stirring occasionally and allowing the cheese to thicken.
Makes:   4 servings
