Title:   Carrot Cake Oatmeal
Category:   Breakfast - Clean (Only natural/organic ingredients), Vegetarian
2/3 c steel-cut oats
1 2/3 c milk (soy, rice or almond)
1/2 c shredded carrots
1 t vanilla extract
1 t ground cinnamon
1/2 t nutmeg
Chopped walnuts, pecans, toasted unsweetened coconut flakes or raisins for toppings
Directions:   Bring milk, vanilla extract, carrots, nutmeg and cinnamon to a boil. Add oats, stir and enjoy.
