Title:   Lentil Barley Soup

2 c lentils (about 1 lb.)
3/4 c barley
8 c water or vegetable stock
1 large onion- chopped
2 medium carrots- diced
2 stalks celery- sliced
1/2 t dried oregano
1/2 t ground cumin
1/4 t dried red pepper flakes
1/4 t black pepper
1 1/2 t sea salt
Directions:   Place all ingredients except salt into a large kettle and bring to a simmer. Cover and cook for 1 hour, stirring occasionally, until lentils and barley are tender. Add salt to taste.
Makes:   12 servings
