Title:   Golden Mushroom Soup

2 medium onions- chopped
2 1/2 c water or stock
1 lb. fresh mushrooms- sliced
1 1/2 t dried dill
1 T paprika
1 t caraway seeds- optional
1/8 t black pepper
2 T soy sauce
2 T olive oil
3 T whole wheat pastry flour
1 c soy milk
2 t lemon juice
Directions:   In a large pan, braise chopped onion in 1/2 c water or stock until soft. Add mushrooms, dill, paprika, caraway and pepper, and continue cooking for 5 minutes, stirring frequently. Add soy sauce and remaining water or stock, then cover and simmer for 15 minutes.

Lightly warm the oil in a saucepan, then add the flour. Cook 1 minute, stirring constantly, then whisk in the soy milk until smooth. Simmer over low heat, stirring constantly, until slightly thickened, then add to the mushroom mixture. Cover and simmer 15 minutes. Just before serving, whisk in the lemon juice.
Makes:   6 to 8 servings
