Title:   Minestrone Soup III

1 small onion- chopped
3 1/2 c water
3 c tomato juice
1 garlic clove- minced
2 medium carrots- diced
1 stalk celery- diced
2 medium potatoes- diced
1 T chopped fresh parsley
1 t dried basil
1 medium zucchini-diced
1/2 c pasta shells
1 c cooked kidney beans- or 1 can (15 oz.) drained
2 1/2 c chopped greens- spinach, collards or kale
Sea salt to taste
Directions:   Heat 1/2 c water in a large kettle. Add the onion and cook over medium-high heat, stirring frequently, until the onion is soft. Add the tomato juice, remaining water, garlic, carrots, celery, potatoes, parsley and basil. Bring to a simmer, then cover and cook 20 minutes.

Add remaining ingredients except salt, then cover and simmer an additional 20 to 30 minutes. Additional tomato juice or water may be added if the soup is too thick. Add salt to taste.
