Title:   Banana Oat Muffins

2 c whole wheat pastry flour
1 1/2 c quick oats or oat bran
1 t baking soda
2 ripe medium bananas- mashed
1 1/2 c soy milk
2 T vinegar
1/2 c molasses
1/2 c chopped dates or raisins
Directions:   Preheat oven to 375F. Mix the flour, oats, and baking soda and make a well in the center. Add the mashed bananas, the liquid ingredients, and the dates or raisins. Stir together just to mix. Spoon batter into nonstick or lightly oil-sprayed muffin tins and bake for 25 minutes, or until tops bounce back when pressed lightly.
Makes:   12 muffins
