14 oz. pasta- cooked and drained
Few handfuls kalamata olives- crushed or sliced
1 to 2 fresh tomatoes- chopped
1/2 bunch red kale- stems removed and shredded
Fresh leafy herbs- like sweet basil, dill, cilantro, parsley
Handful of nuts- crushed- like Brazil, almond, cashew
Extra parmesan- for garnish
1 to 2 small garlic cloves- crushed, minced or ground
Juice of one lemon
1/3 to 1/2 c parmesan cheese
2 to 4 T olive oil
Freshly cracked pepper
|Directions:||For the vinaigrette, crush the garlic, add the lemon juice and whisk in the oil. Mix in the 1/3 to 1/2 c parmesan cheese and add pepper to taste.
For the final pasta salad, combine all pasta ingredients, add dressing and serve fresh with bread.
Add sun-dried tomatoes, pepperoncinis, cucumbers, leafy greens- or dried fruits such as cherries, cranberries or raisins.
