2 pckgs. (12.3 oz.) silken-style tofu- extra firm
2/3 c pure maple syrup or brown rice syrup
1 T pure vanilla extract
|Directions:||In a food processor, combine silken tofu, maple syrup and vanilla extract; process for 1 minute. Scrape down the sides of the container, and process an additional 1 to 2 minutes or until very smooth and creamy.
Transfer tofu topping to an airtight container, and chill in the refrigerator for 1 hour. Serve as a topping for fruit, granola, pies, cakes and desserts- or enjoy all on its own.
Zest-Kissed: Add 2 to 3 t orange, lemon, lime, tangerine or other citrus fruit zest to the food processor and blend with other ingredients.
Lightly Flavored Fruit Topping: Add 1/2 c fruit juice, such as raspberry, blueberry or strawberry to the food processor and blend with other ingredients.
Fruit-flavored Mousse: Add 2 to 3 c fresh or frozen fruit to the food processor, and blend with other ingredients.
Chocolate or Carob: Add 2 c melted chocolate or carob chips to the food processor. Reduce maple syrup to 1/3 c and blend ingredients together.
Tofu Cream Pie: Fill a prebaked pie crust or graham cracker crust with mousse mixture and chill in the refrigerator for several hours before cutting. Or bake the pie at 350F for 30 to 35 minutes and allow to cool completely before cutting. Garnish with fresh fruit, additional dollops of tofu topping, chopped nuts, shredded unsweetened coconut, or chopped chocolate.
