Title:   Basketful of Berries Hand Pies

Ingredients:  
1/2 batch Whole Wheat Pastry Dough
1/2 c strawberries- hulled and sliced
1/2 c blackberries
1/3 c blueberries
1/3 c red raspberries
1/3 c plus 1 t raw sugar or other sweetener
1 T whole wheat pastry flour
1 T fresh or bottled lemon juice
1/8 t ground cardamom
Directions:   1. Prepare Whole Wheat Pastry Dough according to the recipe instructions and chill. Line a cookie sheet with a piece of parchment paper and set aside.

2. In a small bowl, add strawberries, blackberries, blueberries, raspberries, 1/3 c sugar, whole wheat pastry flour, lemon juice and cardamom. Toss gently to combine, and set aside.

3. Preheat the oven to 375F. Transfer chilled dough to a floured work surface. Working with one half at a time, roll out dough to 1/8-inch thickness, and cut it into 5-inch circles. Using a spatula, carefully transfer circles to the prepared cookie sheet. Add trimmings to remaining pastry dough, and repeat rolling, cutting and traying to yield 8 circles.

4. Evenly divide berry filling among dough circles, placing it in the center of each circle. Carefully fold over one side of pastry dough, press down around edges to seal, and then crimp edges with a fork. Sprinkle tops of hand pies with remaining 1 t sugar.

5. Bake for 15 to 20 minutes or until lightly browned. Serve either hot or cold. Allow to completely cool before individually wrapping to preserve freshness. Store in an airtight container if freezing.


VARIATIONS:
Substitute other fruits and flavorings for mixed berries- such as strawberries, peaches, plums, apples, or cherries blended with vanilla, almond, maple or other flavor enhancers.
