Title:   Whole Wheat Pastry Dough

3 c whole wheat pastry flour
1/4 c raw sugar or other sweetener
1 t sea salt
2/3 c vegan maragarine- like Earth Balance
1/4 to 1/3 c cold filtered water
Directions:   In a large bowl, combine whole wheat pastry flour, sugar and sea salt; stir to combine. Using a pastry blender, two knives or your fingertips, cut in margarine until mixture resembles coarse crumbs. Drizzle in cold water, a little at a time, mixing lightly. Add additional water as needed until dough just starts to hold together. Form dough into a ball, cover with plastic wrap, ad chill in the refrigerator for 30 minutes.

Place chilled dough between 2 pieces of parchment paper to help rolling out and transferring to pans. Bake as directed in your recipe. Use as pastry for both sweet and savory pies, turnovers and tarts.
Makes:   Two 9-inch crusts
