3/4 c sliced almonds
1 1/4 c filtered water
1/4 c brown rice syrup or pure maple syrup
1 t raw sugar or other sweetener
1 t pure almond extract
1 t pure vanilla extract
1 t ground cinnamon
1/2 t ground nutmeg
1/2 t sea salt
8 slices whole grain bread
|Directions:||1. Place almonds in a food processor, and process for 30 seconds to roughly chop. Add 1/2 c filtered water and brown rice syrup, and process for 1 minute or until smooth. Add remaining water, sugar, pure almond extract, pure vanilla extract, ground cinnamon, ground nutmeg and sea salt; process mixture an additional 2 minutes or until very smooth and creamy.
2. Transfer almond mixture to a 9x13-inch baking pan. Place 4 bread slices in almond mixture, flip them over to coat other side, and allow bread slices to soak in mixture for 2 minutes. Using olive oil, lightly oil a large, nonstick skillet or griddle and set it over medium heat. Using a fork, carefully remove soaked bread slices from almond mixture, and add them to the hot skillet.
3. Cook slices over medium heat for 1 to 2 minutes or until golden brown. Carefully flip them over with a slotted spatula and cook an additional 1 to 2 minutes or until golden brown on the other side. While cooking the first batch, repeat the soaking procedure for remaining 4 bread slices. Transfer French toast to a large plate. Lightly oil the skillet again, and repeat the cooking procedure for remaining bread slices. Keep slices warm in a 250F oven while preparing second batch. Serve French toast with your choice of jams, preserves, syrups or fresh fruit.
