Title:   Flavorful Fruit Snacks

Ingredients:  
3/4 c raisins
3/4 c raw walnuts
3/4 c medjool dates- pitted
3/4 c dried apricots
3/4 c shredded unsweetened coconut- plus more for rolling
2 T fresh orange juice
Zest of 1 orange
Directions:   In a food processor, combine raisins, walnuts, dates and dried apricots. Pulse several times to roughly chop and then process for 1 to 2 minutes to finely chop. Add coconut, orange juice and orange zest; process an additional 1 to 2 minutes or until mixture comes together to form a ball.

Place some shredded coconut on a plate and set aside. Dampen your hands with water, roll fruit mixture into 1-inch balls, and roll fruit balls in coconut. Place in an air-tight container, and store in the refrigerator or freezer.


Variation:

Cherry-Walnut: Replace raisins, apricots, coconut, orange juice and orange zest with 1 1/2 c raw walnuts, 1 1/2 c pitted medjool dates, and 1 1/2 c dried cherries. Roll in finely chopped walnuts instead of coconut.

Cranberry-Pecan: Replace apricots, coconut and orange juice with 1 1/2 c raw walnuts, 1 1/2 c pitted medjool dates, 1 1/2 c dried cranberries and zest of 1 orange. Process and shape as described, but do not roll in coconut.

Blueberry-Cashew: Replace raisins, apricots, coconut, orange juice and orange zest with 1 1/2 c raw cashews, 1 1/2 c pitted medjool dates and 1 1/2 c dried blueberries. Process and shape as described, but do not roll in coconut.

Fig and Nut: Replace raisins, apricots, coconut and orange juice with 1 c raw walnuts, 1 c pitted medjool dates, 1 c dried figs, 1 c raw cashews or other nuts, and zest of 1 orange. Shape into 2-inch logs and then roll in shredded coconut.
Makes:   14 to 16 pieces
