Title:   Breakfast Potato and Pepper Home Fries

Ingredients:  
6 c red-skinned potatoes- scrubbed and diced (or you can use any kind of potato)
2 c onions- diced
1 1/2 c green bell pepper- seeds and ribs removed and diced
1 1/2 c red bell pepper- seeds and ribs removed and diced
2 T olive oil
1 1/2 T garlic- minced
1/4 c chopped fresh parsley
2 T chopped fresh thyme- or 2 t dry thyme
1/2 t paprika
1/2 t sea salt
1/4 t freshly ground black pepper
Directions:   Saute red-skinned potatoes, onions, bell peppers and olive oil in a large nonstick skillet over medium-high heat, stirring occasionally, for 7 to 10 minutes.

When potatoes are tender and lightly browned, add garlic and saute an additional 2 minutes. Add parsley, thyme, paprika, sea salt and black pepper; saute an additional 2 minutes. Serve immediately as a side dish.
Makes:   6 to 8 servings
