Title:   Groovy Onion Gravy

Ingredients:  
2/3 c whole wheat flour
1 c onions- diced
1 T olive oil
1 T garlic- minced
4 c vegetable stock or filtered water
1/2 c nutritional yeast flakes
2 T tamari, nama shoyu or Bragg Liquid Aminos
1 1/2 t rubbed (dried) sage
1 1/2 t sea salt
1/4 t freshly ground black pepper
Directions:   1. In a medium saucepan, cook flour over low heat, stirring constantly, until lightly browned and fragrant, about 2 to 3 minutes. Transfer browned flour to a medium bowl and set aside.

2. In the same saucepan, saute onions in olive oil over low heat for 3 to 5 minutes or until soft. Add garlic and saute an additional 2 minutes.

3. Add vegetable stock, nutritional yeast flakes, tamari, sage, sea salt, and black pepper to browned flour and whisk well to combine. Add wet ingredients to sauteed onion mixture. Whisk well to combine, and continue to cook mixture, whisking constantly, until thickened. Taste and adjust seasonings as desired. Serve this gravy on top of your favorite vegetables, mashed potatoes, biscuits, or main dishes. Use it to make sauces for casseroles or add it to soups or stews.


VARIATIONS:

Roasted Garlic: Roast 1/2 to 1 c garlic cloves in a 350F oven for 15 to 20 minutes or until golden brown. Use in place of or in addition to the sauteed onion mixture.

Roasted Onion or Shallot: Roast pieces of an onion or 2 whole shallots in a 400F oven for 15 to 25 minutes or until golden brown. Roughly chop and use in place of the sauteed onion mixture.

Mushroom: Saute 1 cup chopped mushrooms along with the onion mixture and add an additional 1 T tamari for a richer flavor.

Creamy: Whisk in a little soy milk and 1 to 2 T additional nutritional yeast flakes to light the gravy's color and flavor.
