Title:   Quinoa Mac 'n Cheese *****

Ingredients:  
2 t olive oil
1 medium leek- white and pale green parts, halved and sliced- or 1 c chives
1/2 c diced tomato- or red/green pepper
1 1/2 c quinoa- rinsed and drained
Few grinds of seasoning salt
2 cloves garlic- minced
3 c water or vegetable stock
2 large eggs or substitutes
1 c soy milk
1 1/2 c grated cheddar cheese
Optional- crushed red pepper, panko bread crumbs, salsa, hot sauce, sour cream
Directions:   Heat oil in medium saucepan over medium heat. Add leek and tomatoes; cover and cook 5 minutes or until tender. Stir in quinoa and garlic and cook, uncovered 3 to 4 minutes, or until grains start to turn opaque- they will not be fully cooked yet.

Add 3 c water and season with salt and the seasoning salt. Cover and reduce heat to medium-low and simmer 15 to 20 minutes or until most liquid has been absorbed. Remove from heat and let stand 5 minutes.

Preheat oven to 350F. Coat 9x13-inch baking dish with cooking spray. Whisk together eggs and milk in large bowl. Fold in quinoa mixture and cheese. Stir very well and let some of the cheese melt- it will seem a little soupy, but don't worry it will all mold together. Transfer to prepared baking dish and if using Panko crumbs add now. You can also sprinkle a bit more cheese on now if you prefer. Bake 25 to 35 minutes or until browned around edges.

Serve and toss with additional optional toppings.
