Ingredients: |
1 1/2 c bread flour
1 c dark rye flour
1 c whole wheat flour
3 T wheat gluten
3 T cocoa powder
1 T caraway seeds, if desired
1 T dry yeast
1 1/2 t sea salt
1 1/4 c water
1 1/2 T oil
1/3 c molasses

Directions: | Combine dry ingredients, then add liquids. Mix together adding additional flour if necessary. Knead for 10 minutes. Raise in greased bowl until double, about 1 hour. Punch down dough. Divide in half to form two round slightly flat loaves, or one large slightly flat oblong loaf. Place on greased cookie sheet that has been sprinkled with cornmeal. Brush tops lightly with butter. Let rise until double, about 45 to 50 minutes. Bake in preheated 375F oven for about 35 minutes, until loaves sound hollow when tapped. |
