Ingredients: |
1 c rice
2 c water
2 quarts milk
1/2 c butter or margarine
2 t vanilla
4 beaten eggs
1 c sugar or substitute

Directions: | Boil rice in water for 7 minutes. Add milk and butter and simmer 1 hour, stirring often to prevent it from sticking to the bottom of the pan too much. Add remaining ingredients, stir well to combine and heat until desired thickness. Remove from heat. Thickens as it cools. Great warm or cold, sprinkled with nutmeg if desired. |
