Title:   Vegetable White Bean Hash

From:   Forks Over Knives
1 leek- white part only, finely chopped
1 red bell pepper- diced
3 cloves garlic- minced
2 t fresh minced rosemary
1 large turnip, peeled and diced
1 medium sweet potato- peeled and diced
Zest and juice of 1 orange
1 can (15 oz.) white beans- drained and rinsed
1 c chopped kale
Sea salt and black pepper to taste
Directions:   Saute the leek and red pepper for 8 minutes over medium flame. Add water 1 to 2 T at a time to keep the vegetables from sticking. Add the garlic and rosemary, and cook another minute. Add the turnip, sweet potato, and beans, and cook for 10 minutes, until the vegetables are tender. Add the beans, season with salt and pepper and cook until the kale is tender, about 5 minutes. Serve
