Title:   Coconut, Cranberry and Chocolate Oatmeal Cookies
Category:   Cookies - Clean (Only natural/organic ingredients), Vegetarian
1/2 c unsweetened applesauce
1/2 c raw sugar or other sweetener
1 flax egg [1 T flaxseed + 3 T water]
1 t pure vanilla extract
1 T pure maple syrup or agave nectar
1 T olive oil
1 c whole wheat pastry flour
1 1/2 c oatmeal
1/2 t baking soda
1/2 t baking powder
1/2 t sea salt
1 T cinnamon
1/4 c toasted unsweetened coconut
1/2 c dried cranberries
1/2 c clean dark chocolate chips- or dairy-free
Directions:   Preheat oven to 350F. Cream together sugar and applesauce. Then add flax egg, vanilla, agave nectar and oil. Then add the dry ingredients slowly. Once all of the flour and oatmeal have been combined, add coconut and cranberries. Slowly mix. With a spoon, stir in chocolate chips.

Drop teaspoon size globs of dough onto a non-stick cookie sheet. Put in oven for 12-15 minutes, or until they are golden brown.
