Title:   Pumpkin Spice Cookies

3 c whole wheat pastry flour
4 t baking powder
1 t baking soda
1 t sea salt
2 t cinnamon
1/2 t nutmeg
1 can (15 oz.) pure pumpkin (about 2 cups)
3/4 c raw sugar or other sweetener
1/2 c molasses
1 c soy milk, rice milk or water
1 c raisins
Directions:   Preheat oven to 350F. Mix the flour, baking powder, baking soda, salt and spices together. In a separate bowl combine the pumpkin, sugar, molasses, and milk or water. Combine the two mixtures, then stir in the raisins. Drop by tablespoonfuls onto an oil-sprayed baking sheet. Bake 15 minutes, or until lightly browned. Remove from baking sheet with a spatula and place on a rack to cool. Once cooled, store in an airtight container in the refrigerator.
