Ingredients: |
4 large ripe pears- any kind
1 c apple juice concentrate
1 c water
1/2 t cinnamon
1 c soy milk
3 T pure maple syrup
1/8 t sea salt
1/2 t natural botterscotch flavor
1 1/2 T rice flour
2 T potato flour
1/2 c Corn Butter [see recipe]

Directions: | Peel the pears, cut them in half and remove the cores. Place the pears in a pot with the apple juice concentrate, water and cinnamon. Cover and simmer until tender when pierced with a fork, 15 to 20 minutes. Remove the pears from the pan and place in serving dishes. Boil the liquid, uncovered, until it is quite thick, about 5 minutes. Pout it over the pears. To make the butterscotch sauce, pour the soy milk into a blender. Add the remaining ingredients and blend until completely smooth. Top each pear half with a generous spoonful of sauce. |
