Title:   Ginger Peachy Bread Pudding

1 can (28 oz.) sliced peaches- packed in juice
1 T cornstarch
6 c cubed whole grain bread (about 8 slices)
1 3/4 c soy milk
1/3 c apple juice concentrate
3/4 c golden raisins
1/2 t ginger
1/2 t cinnamon
1/4 t nutmeg
1/4 t salt
1 t vanilla
Directions:   Drain the liquid from the peaches into a large mixing bowl and add the cornstarch. Stir to dissolve any lumps, then add the bread cubes, soy milk, apple juice concentrate, raisins, ginger, cinnamon, nutmeg, salt and vanilla. Mix well. Chop the peaches and stir them into the mixture. Spread in an oil-sprayed 9x9-inch baking dish. Preheat oven to 350F. Bake for 35 minutes. Serve warm or cooled.
