Title:   Apricot Tapioca

2 c apricot nectar
3 T raw sugar or other sweetener
1/2 lemon- juiced (1 1/2 T)
1 T potato flour
3 T instant tapioca
1/4 t almond extract
Directions:   Blend the apricot nectar, sugar, lemon juice and potato flour until smooth. Transfer to a saucepan, stir in the tapioca, and let stand 5 minutes. Bring the mixture to a full boil over medium heat, stirring constantly. Remove from heat and stir in the almond extract. Transfer to individual serving dishes if desired. Cool before serving.
Makes:   about 2 cups
