Title:   Tapioca Pudding
Category:   Dessert - Clean (Only natural/organic ingredients), Vegetarian

2 c soy milk
1/4 c raw sugar or other sweetener
1 T potato flour
1/8 t sea salt
3 T instant tapioca
1 t vanilla
Directions:   Blend the soy milk, sugar, potato flour and salt until smooth. Transfer to a saucepan and stir in the tapioca. Let stand 5 minutes, then bring the mixture to a boil over medium heat, stirring constantly. Remove from heat and stir in the vanilla. Transfer to individual serving dishes. Cool before serving.
Makes:   about 2 cups
