Ingredients: |
2 c soy milk
1/2 c raw sugar or other sweetener
3 T cornstarch
2 to 3 T lemon juice
2 t lemon zest
1/8 t sea salt
1 T potato flour

Directions: | Combine all the ingredients except the potato flour in a blender and process until smooth. With the blender running, add the potato flour. Transfer to a saucepan and heat, stirring constantly, until the mixture boils. Continue cooking for 30 seconds, stirring constantly. Remove from heat and transfer to individual serving dishes. Cool before serving. |
