Title:   Butterscotch Pudding

2 c soy milk
1 c cooked, peeled yam
5 T pure maple syrup
2 T cornstarch
1 T potato flour
1/2 t butterscotch extract
1/4 t sea salt
Directions:   Combine the soy milk, cooked yam and maple syrup in a blender and process until smooth. With the blender running, add the remaining ingredients. Transfer to a saucepan and heat, stirring constantly, until the mixture bubbles and thickens. Remove from heat and transfer to individual serving dishes if desired. Cool before serving.
Makes:   about 3 cups
