Title:   Quick Black Bean Chili

1/2 c water
1 T reduced-sodium soy sauce
2 onions- chopped
4 garlic cloves- crushed
2 t oregano
1/2 t cumin
1/4 t black pepper
1 can (4 oz.) diced chilies
1 can (15 oz.) crushed tomatoes
2 cans (15 oz.) black beans
1/4 t sea salt
Fresh cilantro- chopped
Directions:   Heat the water and soy sauce in a large pan and add the onions and garlic. Cook over medium heat until the onions are soft, about 5 minutes. Add the oregano, cumin and black pepper and cook 3 minutes; then stir in the diced chilies, tomatoes, black beans and salt. Simmer until thickened, 20 minutes or longer. Sprinkle with chopped cilantro. Serve with brown rice and a green salad. If you like a hotter chili, add some cayenne or fresh chopped jalapenos.
Makes:   about 8 cups
