Ingredients: |
4 russet potatoes- peeled and diced
1 c soy milk
1/4 t onion powder
1/4 t garlic powder
1/2 t sea salt
1 1/2 T rice flour
2 T potato flour
1/2 c Corn Butter [see recipe]
1 T cashews
1 T onion powder
1/2 t garlic granules or powder
2 T cornstarch
2 to 3 T soy sauce

Directions: | Put the ptoatoes and 2 c of water in a saucepan. Simmer until tender when pierced with a fork, about 10 minutes. Drain, reserving the liquid to make the gravy. Pour the soy milk into a blender. With the blender running, add the onion powder, garlic powder, salt, flours and Corn Butter and blend until completely smooth. Mash the potatoes, then add the sauce and mix well. To make the gravy, pour the reserved potato cooking water into a measuring cup and add enough water to make 2 cups. Transfer to a blender and add the remaining ingredients. Blend until completely smooth, then transfer to a saucepan and cook over medium heat, stirring constantly, until thickened. |
