Ingredients: |
1 large onion- chopped
2 garlic cloves- minced
2 russet potatoes- peeled and diced
1 large or 2 small sweet potatoes- peeled and diced
4 c vegetable broth
2 c unsweetened soy milk
1 bunch kale (about 4 c chopped)
1/2 t curry powder

Directions: | Heat 1/2 c of water in a large pot and cook the onion and garlic until the onion is soft, about 5 minutes. Add the potatoes and vegetable broth. Cover and simmer until the potatoes are tender when pierced with a fork, about 15 minutes. Remove about 3 c of the potato mixture and puree with the soy milk in a blender until smooth. Set aside. Add the kale and curry powder to the pot, cover and cook over medium heat until kale is tender, about 5 minutes. Stir in the potato puree and continue to heat until steamy. |
