Title:   Spicy Thai Soup

1 qt. vegetable broth
1 T finely chopped fresh ginger
2 t minced garlic
1/2 to 2 jalapeno pepper- seeded and finely chopped- or more to taste
1 c sliced mushrooms
1 c broccoli- cut into bite-sized florets
1 c bok choy- finely chopped and firmly packed
1 green onion- finely chopped- including top
1 T finely chopped cilantro
Directions:   Combine the vegetable broth, ginger, garlic and jalapeno pepper in a pot and bring to a boil. Add the mushrooms and simmer for 2 minutes. Add the broccoli and bok choy. Simmer until the broccoli is tender but still bright green and crisp, 3 to 4 minutes. Do not overcook! Stir in the green onion and chopped cilantro. Serve immediately.
Makes:   about 6 cups
