Title:   Garbanzo Wraps

1 carrot- scrubbed
1 to 2 garlic cloves
1 can (15 oz.) garbanzo beans- drained
1 T tahini
3 T lemon juice
1/4 t cumin
1/4 t paprika
6 flour tortillas or chapatis
2 c cooked brown rice
3 c prewashed salad mix
1 c chopped cilantro- optional
Directions:   Finely chop the carrot and garlic in a food processor or by hand. Add the drained beans, tahini, lemon juice, cumin and paprika and process until smooth, or mash until well mixed. Spread about 1/2 c of the garbanzo mixture along the center of a tortilla and top it with about 1/3 c of the brown rice and salad mix. Sprinkle with chopped cilantro if desired. Roll the tortilla firmly around the filling.
Makes:   6 to 8 wraps
